Kashmiri bakery Katlam



Katlam is a type of kashmiri bakery, generally prepared in tandoor. it is crisp from outside by inside it is soft but separates in layers. it has a very unique and different taste. it is enjoyed with tea.

Recipe:

Preparing Katlam requires three steps:
1. Preparing the dough.
2. Preparing the bread.
3. Baking the bread.

INGREDIENTS:

1, Refined wheat flour (Maida)                         250 g
2. Baking soda                                                   1/4 tsp
3. Salt                                                                 1/4 tsp
4. Ghee                                                               as required for layering
5. milk                                                                for coating

STEPS:

1. Add 1/4 tsp salt and 1/4 tsp baking powder to refined wheat flour and mix.
2. Prepare a soft dough
3. Divide the dough into two parts, 
4. Flatten one part into a thin sheet
5. Coat the sheet with a layer of Ghee,
6. Fold the sheet to double it, again coat the folded sheet with ghee and refold it so that it becomes four layered.
7.cut this four layered sheet and use one part as stuffing and another part as outer covering.
8. make a round shaped bread by flattening 
9. bake this bread on a griddle or bake in an electric tandoor.
