Sochal also known as Sonchal ka saag is prepared from mallow plant. It leaves are very distinctive in taste so its very commonly used as a leafy vegetable. The complete plant is edible and it tastes very delightful. Sochal is very commonly prepared in kashmiri families during winter.
INGREDIENTS
1. Mallow plant 1kg
2. Dry Red Chilly Whole 6-7 no
3. Asfoetida/ Hing 1/8 tsp
4. Salt as per taste
5. Red chilly powder 2 tbsp
6. Oil 7-8 tbsp
7 Green chillies 4-5 no (optional)
RECIPE:
1. Cut and clean the leaves from the plant and cut the soft part of stem into small pieces.
2. Wash it thoroughly by dipping into water at least twice to remove mud.
3 Heat oil into a pan, add asfoetida and red chillies whole to it
4 Add mallow and cook over high flame. The mallow will leave water.
5. Now add salt and red chilly powder
6. Cook till all the water evaporates and oil starts leaving from the sides
Mallow/ Sonchal ka saag is ready to serve
