Tomato Brinjal/ eggplant curry known as tamatar wangan is a very famous and mouth watering recipe cooked in almost every kashmiri household. The soft and juice brinjals dipped in tangy tomato curry is very delightful.

RECIPE:
Tamatar wangan is prepared in two steps:
1. Frying brinjals/egg plants.
2. cooking them with tomatoes.
INGREDIENTS:
1. Brinjals/ Egg plant 1/2 kg
2. tomatoes 4-5 no
3. Salt as per taste
4. Red chilly Powder 1 tsp
5. Fennel seeds powder 1 tsp
6. cumin seeds 1/2 tsp
7. green chilly 1 no
STEPS:
1. Make cuts on the brinjal and fry them till it becomes little brown.
2. Add 2 tsp oil in a pan, add 1/4 tsp cumin seeds and 1 green chilly.
3, Add tomatoes, salt, red chilly powder and fennel seeds powder
4. cover with a lid till 5 min
5. After 5 min mash slightly and add water
6. Add brinjals and cook for 5 min.
Tamatar Wangan is ready to serve
