Chok Wangan is a very tempting kashmiri recipe which is prepared from fresh brinjals/egg plant. It is prepared without onions and tomatoes but tastes very delightful
INGREDIENTS:
1. Brinjals/ egg plant 1/2 kg
2. oil for frying+ 2 tbsp for cooking
3. asfoetida 1 pinch
4. Bay leaves 2 no
5. Cinnamon sticks 2-3 no
6. Cardamom green 2 no
7 cumin seeds 1/ 4 tsp
7 cumin seeds 1/ 4 tsp
8 Fennel seeds powder 1 tsp
9. Red Chilly powder 1.5 tsp
10 Tamarind 2 tbsp
11.garam masala powder 1/2 tsp
RECIPE:
1. Cut brinjals into half and slit each half.
2. Soak 2 tbsp tamarind into water for 15 min and then strain it to get tamarind water.
3. Fry the brinjals till golden brown and crisp.
4. Add 2 tbsp oil to a wok and roast asfoetida, bay leaves,cinnamon sticks,cumin seeds, fennel seeds powder and red chilly powder into it
5. Add water 1 glass and then add tamarind water to it.
6. let it boil for 2 min and then add fried brinjals to it
7 Add garam masala powder and let it boil for 2-3 min or till oil separates
Chokk wangan is ready to serve
