Krai All, All Roganjosh, Pumpkin ki sabzi, Kaddu ki sabzi,
Pumpkin has naturally sweet taste which gives a very different taste and flavour to the recipe
INGREDIENTS:
1. Pumpkin 1 kg
2. oil 100 ml
3. Cumin seeds 1/2 tsp
4. cinnamon sticks 2 no
5. cloves 2 no
6. Green cardamon 2 no
7. Thick cardamom 2 no
8. Asfoetida 2 pinch
9. Red Chilly Powder 2 Tbsp
10. Fennel seed powder 1.5 Tbsp
11. Salt as per taste
12. Garam Masala Powder 1/2 Tsp
13. Sugar 1/2 Tsp (Add only if pumpkin is not sweet)
Method:
1. Add oil to the wok and add diced pumpkin pieces and fry them from both sides for 3-4 mins.
2. Take fried pumpkin pieces out in to a bowl
3. Add Cumin seeds, cinnamon sticks, Cloves, Green cardamon, Thick cardamon, Asfoetida, Red Chilly Powder, Fennel seed powder and salt in to the oil and roast for about 1 min.
4. Now add fried pumpkin pieces in to the spices along with 2 cups of water, let it boil for about 2 mins or till oil separates.
5. Add garam masala powder and sugar (only if pumpkin is not sweet)
6. Cover with a lid and cook for 2 more mins.
Krai All is ready to serve.
