Dahi Baingan also known as dodh-wangan is a kashmiri cuisine. This dish can be prepared with any kind of brinjals but tastes best with desi pink coloured brinjals mostly grown in kashmir valley. The whole brinjals dipped in curd curry tastes so sumptuous that its taste can never be forgotten.

Recipe
Cooking Dahi Baingan involves three steps:
1. Frying or baking brinjals.
2. Preparing curd currry.
3. Cooking fried brinjals in curd curry.
Ingredients
1. Brinjals 1/2 kg
2. Curd 1/2 kg
3. cuinin seeds 1/2 tsp
4. Turmeric powder 1/2 tsp
5. fennel seeds powder 1 tsp
6. Green chilly 1 no.
7. Salt as per taste
8. Oil for frying and i tbsp for curd curry
steps
1. Slit each brinjals with 2 cuts or cut the brinjals as required.
2. Fry or bake the brinjals.
3. Take a pan and add 1 tbsp oil to it,
4. Add cumin seeds, green chilly, turmeric powder and fennel seeds powder to it.
5. Roast spices and add smoothly blend curd to it.
6. Keep stirring till curd starts boiling.
7. Add water 2 cups
8. Add fried or baked brinjals and let it cook for 5 minutes.
