Rasmalai

Rasmalai is a very famous tempting sweetdish prepared from milk and sugar. The soft spongy sweet cheese is dipped in thick sweet milk, which gives the sweet dish a very tempting and delightful taste.

Recipe:

 Rasmalai is prepared in three steps
1. preparing the sweet cheese(Rasgullas)
2. preparing the sweet thick milk(Rabdi)
3. Dipping the cheese in milk(Rasmalai)

INGREDIENTS:

1. Milk full cream                                1 litre for Rasgullas +!/2 litre for Rabdi
2. lemon  juice                                     2tbsp
3. semolina(sooji)                                1tsp
3. sugar                                                1.5 cup for Rasgulla + 1/2 cup for Rabdi 
4 Saffron(kesar)                                   1 pinch
5. Cardamom powder(elaichi)             3-4 no
6. dry fruits                                           as required

STEPS;

I For Rasgullas:

1. Boil 1 litre milk and add lemon juice to it to make cheese(chenna)
2. Separate cheese(chenna) using a muslin cloth and let all the water drain out.
3. Mash cheese(chenna) with palms of the hand to make it like a smooth dough
4. Make small balls and flatten them a bit.
5. Take 1.5 cup sugar and 3 cups water in a pressure cooker and add the made cheese balls(chenna balls to it.
6. Pressure cook till two whistles on high flame and wait till steam settles.

II For Rabdi

1. Boil half litre milk and add 1/2 cup sugar, cardamom powder, saffron and dry fruits to it.
2. Let it boil for 5 min
3 Add Rassgullas(cheese balls) to Rabdi
4. keep them soaked till 2 to 3 hrs

Refrigerate and Rasmalai is ready to serve
