Nadur yakhni is a very tempting recipe of kashmir. Lotus is a very beautiful flower whose stem is called as nadur/kamal kakkdi. These lotus stems are cut into small pieces and softened by boiling and then cooked with curd curry. The complete dish tastes highly delightful
INGREDIENTS:
1. Lotus stem 500g
2. Curd 500 g
3 Cumin seeds 1/2 tsp
4 Clove 1 no
5 Cinnamon sticks 2-3 no
6.Thick cardamom 1 no
7. Green cardamom 2 no
8. Black pepper 3-4 no
9. bay leaves 1-2 no
10.Fennel seeds powder 1.5tsp
11 Dry ginger powder 1/4 tsp
12 Mustard oil 3-4 tsp
13 Dry fruits(cashew & Dry grapes) a few (optional)
14 Garam masala powder 1/4 tsp (optional)
15 Dry mint leaves powder 1/4 tsp (optional)
RECIPE;
1. Peel off the top skin from the stem then cut it into small pieces and wash under running water to remove the mud stains
2.Add 1 tsp ghee to a pressure cooker. Now add cumin seeds,clove, cinnamon sticks,thick cardamom,green cardamom, black pepper,bay leaves to it and roast them for 1 min
3. Add lotus stem pieces to the spices and cook them for 2-3 min. Then add 2 cups of water and pressure cook till 3 whistles on medium flame or till the stem pieces softens.4. Mix fennel seeds powder and dry ginger powder to curd and churn it well
5. Heat 3-4 tsp mustard oil in a pan till it smokes, add a pinch of asfoetida to the oil. Then add curd mix and stir continuously till it boils
6. Add dry fruits, garam masala powder and dry mint leaves and let it boil for 3-4 min
Nadru yakhni is ready to serve can be enjoyed with rice or roti or naan
